Welcome to Fox Run. We were born in the height of the pandemic, March 2020, but our story began long before that. I fell in love with the world of hospitality in 2011 and made it my goal to one day open a restaurant of my own. With this in mind, I worked in several Denver kitchens including The Plimoth, To the Wind Bistro, and Vert Kitchen to gain a wide range of experience. I could not imagine starting such an undertaking without these opportunities to learn and grow.
When it came time to go out on my own, I chose to focus on breakfast and lunch for Fox Run Café for the ease and pace. Our cornerstone is simplicity, comfort, and hospitality. We aim to be a place where you can come and feel at home. The name, Fox Run, pays homage to my mother’s home, where our family and friends have gathered for years for vacations and to celebrate holidays and birthdays. It has always been a special place to us. During those occasions, everyone was welcome to make themselves at home and knew nothing, especially food and drink, was off limits.
In 2016, I met Kelsie Berens while we were working at The Plimoth. There, she was the sole visionary and talent behind the pastry program. Besides building a lasting friendship while working together, I quickly noticed Kelsie’s impeccable attention to detail, creativity, and kindness in all things, especially when it comes to sweets. When I was ready to build Fox Run, I knew I wanted to do it together.
Our mission is to get better every day, to learn and grow, and create an exceptional experience not only for our guests but for the people who work for us.
